Almost every culture has at least one summertime cocktail of great renown. There are mojitos and pina coladas from the Caribbean, the old Singapore sling and the American mint julep —all good and all fitting examples of a refreshing tradition.
The old standby in England is something called the Pimm’s Cup, a cooling mix of lemonade, mint, fruit and, naturally, Pimm’s.
For those unfamiliar with this wonderful alcoholic beverage, Pimm’s No. 1 is gin-based. A secret recipe yields a wine-dark spirit, almost tealike in color, carrying flavors that combine hints of citrus and spice. The light character and lower alcohol content makes it perfect for warm-weather outings and for mixing with bright ingredients, such as fruit.
Pimm’s was created in the early 1800s, reputedly as a medicinal aide. Soon thirsty residents of Southern England were ordering bottles for more general purposes. The steeped spirit became so popular that it eventually multiplied into five other numbered products. Now only Pimm’s No. 1 remains on the market, joined occasionally by small batches of No. 6 and No. 3.
The recipes here were created by Barego bartenders Jakub Slaba and Michal Hyka.
Martin Hamáček is bartender at Barego, located in the Mandarin Oriental, Nebovidská 1, Prague 1–Malá Strana. Tel. 233 088 777.
